I love finding new ways to incorporate fruit into my salads. For some reason, I look forward to a bite of leafy greens combined with a fresh fruit and some tangy dressing. Try this recipe as a great way to enjoy cherries this summer!
1/4 cup sour cream (I like Nancy’s Organic Cultured Sour Cream)
1/4 cup whole yogurt or kefir
1/2 cup of goat cheese, divided
2 tablespoons snipped chives
1 tablespoon champagne vinegar
2 tablespoons extra-virgin olive oil
1 lb roasted chicken breast
1 head of Bibb lettuce
2 cups organic cherries
1/4 cup toasted walnuts
sea salt and ground pepper
Whisk together the sour cream, yogurt, 1/4 cup of the goat cheese, chives, vinegar and enough water (1-2 tablespoons) to achieve a desired consistency. Season with salt and pepper. Divide the lettuce among 4 plats and top with sliced chicken breast, cherries, walnuts, and reserved goat cheese. Serve with dressing. Serves 4.
