Cucumber Summer Squash Salad with Yogurt-Herb Dressing

It’s a push each week to use all the veggies I’ve been getting in my CSA farm share.  Sigh….first world problems.  The fun part is I’ve created some yummy new recipes.  This salad is just divine and especially if you get the ingredients right from the garden (or the garden of your local farm!).

Cucumber Summer Squash Salad with Yogurt Herb Dressing memeDressing:

1/4 cup yogurt or kefir
2 tablespoons chopped fresh dill
1 tablespoon chopped fresh parsley
1/2 tablespoon chopped fresh mint
2 tablespoons fresh lemon juice
2 tablespoons olive oil
2 teaspoons dijon mustard
1/4 teaspoon salt
1/4 teaspoon ground pepper
2 large cucumbers, thinly sliced using a vegetable peeler
2 small yellow summer squash, thinly sliced using a vegetable peeler
1 red onion, thinly sliced
Whisk together the dressing ingredients until smooth and mix into the veggies to coat.
