Guacamole Chicken Salad

 

1 avocado, chopped
chicken guac salad1/2 cup chopped tomato
1/4 cup chopped cucumber
2 Tablespoons chopped cilantro
1 small roasted Chicken Breast, chopped into cubes
Salad Greens
2 Tablespoons Extra-Virgin Olive Oil
1 Tablespoon lime Juice
Salt
Roasted Pumpkin Seeds (OPTIONAL)

 

With a fork, mash the avocado roughly with the lime juice and salt.  Mix in the tomatoes, Cucumber, cilantro and chicken.  Spoon onto bed of salad greens and top with pumpkin seeds.
To make pumpkin seeds: Roast 1/4 cup of pumpkin seeds at 350 on a baking sheet  until fragrant.  Sprinkle 1 teaspoon of coconut aminos or soy sauce over the seeds and return to oven for 2-3 minutes more.  Allow to cool.
